10 Minute Air Fryer Chicken Sausage and Veggies


Description

A quick and delicious air fryer meal featuring chicken sausage and a colorful mix of veggies, perfect for busy weeknights.


Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz), robust Italian flavor


Instructions

  1. Chop the veggies into 1-inch pieces and place them in a large mixing bowl.
  2. Drizzle the avocado oil over the veggies and toss until well-coated.
  3. In a separate bowl, mix garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Sprinkle over the veggies and toss to combine.
  4. Slice the chicken sausage into ¾-inch rounds and add to the veggie bowl, tossing to combine.
  5. Preheat the air fryer to 390°F and lightly spray the basket with cooking spray.
  6. Add the sausage and veggie mixture to the basket in an even layer.
  7. Cook for 10 minutes, flipping halfway through for even cooking.
  8. Remove from air fryer and serve immediately, optionally over cauliflower rice or brown rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for longer storage. To reheat, use the air fryer for 3-5 minutes.
