A quick and wholesome dinner featuring vibrant vegetables and juicy chicken sausage, all cooked to perfection in the air fryer in just 10 minutes.
Ingredients
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large orange bell pepper, cut into 1-inch pieces
- 1 red onion, peeled and cut into 1-inch pieces
- 1 medium zucchini, cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- A pinch of black pepper
- 1 package chicken sausage (12 oz) – robust Italian flavor
Instructions
- Chop the red and orange bell peppers, red onion, and zucchini into 1-inch pieces and place them in a large bowl.
- Drizzle the chopped veggies with avocado oil, ensuring they are evenly coated.
- In a separate bowl, mix together garlic powder, onion powder, Italian seasoning, salt, and black pepper. Sprinkle this spice blend over the veggies and toss to coat.
- Slice the chicken sausage into 3/4 inch rounds and combine it with the seasoned vegetables.
- Preheat your air fryer to 390 degrees F. If necessary, spray the basket with cooking spray.
- Place the veggie and sausage mixture in the air fryer basket in an even layer, avoiding overcrowding. You may need to work in batches.
- Cook for 10 minutes, flipping halfway through for even cooking.
- Remove the dish from the air fryer and serve immediately, optionally pairing it with cauliflower rice or brown rice.
Notes
For a spicy kick, add some sliced jalapeños or a sprinkle of crushed red pepper. You can also experiment with different vegetables and proteins to suit your taste.
