Description

A quick and wholesome dinner featuring vibrant vegetables and juicy chicken sausage, all cooked to perfection in the air fryer in just 10 minutes.


Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • A pinch of black pepper
  • 1 package chicken sausage (12 oz) – robust Italian flavor


Instructions

  1. Chop the red and orange bell peppers, red onion, and zucchini into 1-inch pieces and place them in a large bowl.
  2. Drizzle the chopped veggies with avocado oil, ensuring they are evenly coated.
  3. In a separate bowl, mix together garlic powder, onion powder, Italian seasoning, salt, and black pepper. Sprinkle this spice blend over the veggies and toss to coat.
  4. Slice the chicken sausage into 3/4 inch rounds and combine it with the seasoned vegetables.
  5. Preheat your air fryer to 390 degrees F. If necessary, spray the basket with cooking spray.
  6. Place the veggie and sausage mixture in the air fryer basket in an even layer, avoiding overcrowding. You may need to work in batches.
  7. Cook for 10 minutes, flipping halfway through for even cooking.
  8. Remove the dish from the air fryer and serve immediately, optionally pairing it with cauliflower rice or brown rice.

Notes

For a spicy kick, add some sliced jalapeños or a sprinkle of crushed red pepper. You can also experiment with different vegetables and proteins to suit your taste.
