A comforting lasagna-inspired soup filled with ground meat, cheese, and pasta, perfect for chilly nights.
Ingredients
- 1 pound ground beef or Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 28 ounces crushed tomatoes
- 4 cups chicken or beef broth
- 2 cups uncooked pasta (such as broken lasagna noodles)
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- In a large pot, brown the ground beef or sausage over medium heat. Drain any excess fat once cooked.
- Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent.
- Stir in the crushed tomatoes, broth, uncooked pasta, Italian seasoning, salt, and pepper, mixing well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes or until the pasta is fully cooked.
- Once the pasta is tender, stir in the ricotta cheese until everything is well combined.
- Serve hot, garnished with shredded mozzarella and fresh basil if desired.
Notes
Great to serve with garlic bread or a fresh salad. Leftovers can be stored for up to 3 days in the refrigerator or frozen for up to 3 months.
