Description

A comforting lasagna-inspired soup filled with ground meat, cheese, and pasta, perfect for chilly nights.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken or beef broth
  • 2 cups uncooked pasta (such as broken lasagna noodles)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)


Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat. Drain any excess fat once cooked.
  2. Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent.
  3. Stir in the crushed tomatoes, broth, uncooked pasta, Italian seasoning, salt, and pepper, mixing well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes or until the pasta is fully cooked.
  5. Once the pasta is tender, stir in the ricotta cheese until everything is well combined.
  6. Serve hot, garnished with shredded mozzarella and fresh basil if desired.

Notes

Great to serve with garlic bread or a fresh salad. Leftovers can be stored for up to 3 days in the refrigerator or frozen for up to 3 months.
