Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups apples, peeled and diced
- 1 teaspoon ground cinnamon
- 1/2 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the flour mixture.
- Gently fold in the diced apples until they are evenly distributed in the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- In a small bowl, mix together the oats, brown sugar, and a little flour for the crumb topping. Sprinkle this mixture over the top of the batter.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before drizzling it with a sweet cinnamon apple glaze, if desired.
Notes
Serve warm, at room temperature, or chilled. Great with vanilla ice cream or a drizzle of caramel sauce. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Can also be frozen.
