Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups apples, peeled and diced
  • 1 teaspoon ground cinnamon
  • 1/2 cup rolled oats


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the flour mixture.
  6. Gently fold in the diced apples until they are evenly distributed in the batter.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. In a small bowl, mix together the oats, brown sugar, and a little flour for the crumb topping. Sprinkle this mixture over the top of the batter.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool before drizzling it with a sweet cinnamon apple glaze, if desired.

Notes

Serve warm, at room temperature, or chilled. Great with vanilla ice cream or a drizzle of caramel sauce. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Can also be frozen.
