Ingredients
- 1 cup cooked quinoa or brown rice
- 1 cup roasted sweet potatoes, diced
- 1 cup Brussels sprouts, halved and roasted
- 1 apple, sliced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- Preheat your oven to 400°F (200°C). On a baking sheet, toss together the diced sweet potatoes and halved Brussels sprouts with olive oil, salt, and pepper. Roast them for about 20-25 minutes, or until tender and slightly caramelized.
- In a large bowl, combine the cooked quinoa or brown rice with the roasted sweet potatoes and Brussels sprouts. Add in the slices of apple, chopped walnuts, and dried cranberries.
- If desired, drizzle with more olive oil, season with salt and pepper, and toss gently to combine.
