Avocado with Cherry Tomato Toast


Description

A delightful combination of creamy avocados and juicy cherry tomatoes on crispy toast, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 4 slices of sourdough or rustic bread
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic glaze
  • 1/2 teaspoon salt
  • Pinch of black pepper


Instructions

  1. Toast the slices of sourdough bread at 375°F (190°C) for 5–7 minutes until golden brown.
  2. Mash the avocados in a bowl and season with salt and pepper.
  3. Spread the mashed avocado evenly over each slice of toast.
  4. Top with halved cherry tomatoes.
  5. Drizzle with olive oil and balsamic glaze.
  6. If desired, sprinkle with flaky salt or chili flakes.
  7. Serve immediately while warm.

Notes

For best results, consume the toast right after preparing as the avocado doesn’t store well.
