A delightful combination of creamy avocados and juicy cherry tomatoes on crispy toast, perfect for breakfast, brunch, or a light dinner.
Ingredients
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 4 slices of sourdough or rustic bread
- 1 tablespoon olive oil
- 2 teaspoons balsamic glaze
- 1/2 teaspoon salt
- Pinch of black pepper
Instructions
- Toast the slices of sourdough bread at 375°F (190°C) for 5–7 minutes until golden brown.
- Mash the avocados in a bowl and season with salt and pepper.
- Spread the mashed avocado evenly over each slice of toast.
- Top with halved cherry tomatoes.
- Drizzle with olive oil and balsamic glaze.
- If desired, sprinkle with flaky salt or chili flakes.
- Serve immediately while warm.
Notes
For best results, consume the toast right after preparing as the avocado doesn’t store well.
