Ingredients
- 3 medium ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger

- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup brown sugar
- 1/3 cup molasses
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and nutmeg.
- In a separate large bowl, mix the mashed bananas, brown sugar, molasses, eggs, melted butter, and vanilla extract until smooth.
- Gently fold the dry ingredients into the wet ingredients just until combined. Avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
