Banana Gingerbread Loaf

Ingredients

  • 3 medium ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup brown sugar
  • 1/3 cup molasses
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and nutmeg.
  3. In a separate large bowl, mix the mashed bananas, brown sugar, molasses, eggs, melted butter, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet ingredients just until combined. Avoid overmixing.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and serve plain or with your favorite topping.

Notes

Using overripe bananas will enhance flavor and moisture. Feel free to adjust the spice levels or incorporate nuts for texture.
