Delicious and nutritious muffins that combine ripe bananas and rolled oats for a quick breakfast or snack.
Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup milk (or non-dairy alternative)
- 1/4 cup maple syrup (optional)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the mashed bananas, rolled oats, milk, and maple syrup if using.
- Add in the baking powder, baking soda, cinnamon, and salt. Stir until well mixed.
- Fold in chocolate chips or blueberries, if desired.
- Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool before enjoying.
Notes
For best results, use very ripe bananas that are speckled with brown spots. Feel free to customize with nuts or different spices.
