Description

Delicious and nutritious muffins that combine ripe bananas and rolled oats for a quick breakfast or snack.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk (or non-dairy alternative)
  • 1/4 cup maple syrup (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or blueberries (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the mashed bananas, rolled oats, milk, and maple syrup if using.
  3. Add in the baking powder, baking soda, cinnamon, and salt. Stir until well mixed.
  4. Fold in chocolate chips or blueberries, if desired.
  5. Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow the muffins to cool before enjoying.

Notes

For best results, use very ripe bananas that are speckled with brown spots. Feel free to customize with nuts or different spices.
