Description

A comforting and easy one-pot meal blending black beans, rice, and smoked sausage, perfect for weeknight dinners.


Ingredients

  • 12 oz smoked sausage
  • 1 bell pepper, chopped
  • 1 can black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • Juice of 1 lime
  • 1 small onion, diced
  • 1/2 tsp dried oregano
  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 1/2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and black pepper, to taste


Instructions

  1. Begin by heating the olive oil in a large pot over medium heat.
  2. Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Introduce the sausage and cook until browned.
  5. Sprinkle in the chili powder, paprika, oregano, cumin, salt, and black pepper. Stir well.
  6. Pour in the chicken broth and bring to a boil.
  7. Add in the rice and black beans, ensuring everything is mixed.
  8. Once it simmers, reduce heat to low, cover, and cook until rice is done, about 20 minutes.
  9. Finish with a sprinkle of fresh cilantro and serve with lime wedges.

Notes

For a vegetarian option, swap sausage for plant-based alternatives and consider adding extra veggies.
