Ingredients
- 12 oz smoked sausage
- 1 bell pepper, chopped
- 1 can black beans, rinsed and drained
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- Juice of 1 lime
- 1 small onion, diced
- 1/2 tsp dried oregano
- 2 cups chicken broth
- 1 cup long-grain white rice
- 1/2 tsp chili powder
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 1 tsp ground cumin
- Salt and black pepper, to taste
Instructions
- Begin by heating the olive oil in a large pot over medium heat.
- Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Introduce the sausage and cook until browned.
- Sprinkle in the chili powder, paprika, oregano, cumin, salt, and black pepper. Stir well.
- Pour in the chicken broth and bring to a boil.
- Add in the rice and black beans, ensuring everything is mixed.
- Once it simmers, reduce heat to low, cover, and cook until rice is done, about 20 minutes.
- Finish with a sprinkle of fresh cilantro and serve with lime wedges.
Notes
For a vegetarian option, swap sausage for plant-based alternatives and consider adding extra veggies.
