Description

A delightful salad combining blackberries, avocado, and arugula for a fresh and healthy meal.


Ingredients

  • 5 cups Arugula
  • 1 Avocado
  • 1 cup Blackberries
  • 3/4 cup Blueberries
  • 1 1/2 cups Cucumber
  • 2 tbsp Mint, fresh
  • 2 tbsp Lime juice, freshly squeezed
  • 1 tbsp Maple syrup
  • Freshly cracked Black pepper
  • 3/4 tsp Salt
  • 1/3 cup Olive oil, extra-virgin
  • 1/3 cup Hazelnuts, toasted
  • 1/3 cup Feta cheese


Instructions

  1. Toss together the arugula, blackberries, blueberries, sliced cucumber, and diced avocado in a large bowl.
  2. Whisk together the lime juice, maple syrup, olive oil, salt, and freshly cracked black pepper in a separate small bowl to create the dressing.
  3. Drizzle the dressing over the salad and gently toss everything together to ensure every ingredient is nicely coated.
  4. Sprinkle in the fresh mint, toasted hazelnuts, and crumbled feta cheese. Mix lightly to combine.
  5. Serve immediately for the freshest taste.
