Ingredients
- 5 cups Arugula
- 1 Avocado
- 1 cup Blackberries
- 3/4 cup Blueberries
- 1 1/2 cups Cucumber
- 2 tbsp Mint, fresh
- 2 tbsp Lime juice, freshly squeezed
- 1 tbsp Maple syrup
- Freshly cracked Black pepper
- 3/4 tsp Salt
- 1/3 cup Olive oil, extra-virgin
- 1/3 cup Hazelnuts, toasted
- 1/3 cup Feta cheese
Instructions
- Toss together the arugula, blackberries, blueberries, sliced cucumber, and diced avocado in a large bowl.
- Whisk together the lime juice, maple syrup, olive oil, salt, and freshly cracked black pepper in a separate small bowl to create the dressing.
- Drizzle the dressing over the salad and gently toss everything together to ensure every ingredient is nicely coated.
- Sprinkle in the fresh mint, toasted hazelnuts, and crumbled feta cheese. Mix lightly to combine.
- Serve immediately for the freshest taste.
