Description

A delightful and nutritious breakfast option that you can prepare in advance, packed with fiber, protein, and antioxidants.


Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk (your choice of dairy or non-dairy)
  • 1 cup Greek yogurt (vanilla or blueberry)
  • 2-3 teaspoons vanilla extract
  • 1 pinch salt


Instructions

  1. In a mixing bowl, combine the blueberries and maple syrup. Gently mash with a fork, leaving some whole for texture. Set aside.
  2. In a separate bowl, mix the rolled oats, chia seeds, water (or milk), Greek yogurt, vanilla extract, and salt until well combined.
  3. In a mason jar or serving bowl, layer the blueberry mixture and overnight oats mixture until all ingredients are used up, finishing with oats on top.
  4. Cover and refrigerate overnight or for at least 4 hours.

Notes

Store leftovers in an airtight container in the fridge for up to five days. You can freeze for longer storage.
