A delicious no-cook breakfast option infused with blueberries, creamy yogurt, and a hint of maple syrup.
Ingredients
- 2 cups blueberries (fresh or frozen)
- 2 tablespoons maple syrup
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk
- 1 cup Greek yogurt (vanilla or blueberry)
- 2-3 teaspoons vanilla extract
- 1 pinch salt
Instructions
- In a mason jar or bowl, layer the blueberries at the bottom.
- Drizzle 1 tablespoon of maple syrup over the berries.
- In a separate bowl, combine the rolled oats, chia seeds, liquid (water or milk), Greek yogurt, vanilla extract, and salt. Stir well to combine.
- Carefully spoon the oat mixture over the blueberry layer in the jar, ensuring all blueberries are covered.
- Seal the jar or cover the bowl with plastic wrap and refrigerate overnight.
- In the morning, stir the oats and top with extra blueberries, nuts, or a drizzle of maple syrup if desired.
Notes
Best enjoyed within 3-4 days in the refrigerator. Can be frozen before adding yogurt and toppings.
