A delightful and nutritious no-cook breakfast combining oats, blueberries, and Greek yogurt, perfect for busy mornings.
Ingredients
- 2 cups blueberries (fresh or frozen)
- 2 tablespoons maple syrup
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk (any kind you prefer)
- 1 cup Greek yogurt (vanilla or blueberry)
- 2-3 teaspoons vanilla extract
- 1 pinch salt
Instructions
- In a mixing bowl, mash 1 cup of blueberries with a fork; add 2 tablespoons of maple syrup and mix.
- In a separate bowl, combine rolled oats, chia seeds, and a pinch of salt.
- Pour in the milk or water and add 2-3 teaspoons of vanilla extract; stir well.
- Layer half of the oat mixture in a jar, followed by the mashed blueberry layer, then finish with remaining oats and a dollop of Greek yogurt.
- Cover and refrigerate overnight.
- In the morning, enjoy cold or microwave for a minute, adding extra blueberries, nuts, or honey as desired.
Notes
Best enjoyed within 3-5 days when stored in an airtight container. Can be frozen for up to one month.
