Description

A delightful and nutritious no-cook breakfast combining oats, blueberries, and Greek yogurt, perfect for busy mornings.


Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk (any kind you prefer)
  • 1 cup Greek yogurt (vanilla or blueberry)
  • 2-3 teaspoons vanilla extract
  • 1 pinch salt


Instructions

  1. In a mixing bowl, mash 1 cup of blueberries with a fork; add 2 tablespoons of maple syrup and mix.
  2. In a separate bowl, combine rolled oats, chia seeds, and a pinch of salt.
  3. Pour in the milk or water and add 2-3 teaspoons of vanilla extract; stir well.
  4. Layer half of the oat mixture in a jar, followed by the mashed blueberry layer, then finish with remaining oats and a dollop of Greek yogurt.
  5. Cover and refrigerate overnight.
  6. In the morning, enjoy cold or microwave for a minute, adding extra blueberries, nuts, or honey as desired.

Notes

Best enjoyed within 3-5 days when stored in an airtight container. Can be frozen for up to one month.
