Blueberry Greek Yogurt Bites

Description

A quick and healthy frozen snack made with creamy Greek yogurt, blueberries, and a hint of citrus.


Ingredients

  • 1 1/2 cups plain Greek yogurt
  • 3/4 cup blueberries, fresh or frozen
  • 1 tbsp honey or maple syrup
  • 1 tsp honey (optional)
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp chia seeds


Instructions

  1. In a mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract. Stir until smooth and well combined.
  2. Gently fold in the blueberries and chia seeds, taking care not to crush the berries.
  3. Spoon the mixture into silicone molds or an ice cube tray, filling each cavity about three-quarters full.
  4. Place the molds flat in the freezer for about 2 hours, or until firm to the touch.
  5. Once frozen solid, pop the yogurt bites out of the molds and transfer them to an airtight container.
  6. Store in the freezer and take out a few bites whenever desired.

Notes

Use full-fat Greek yogurt for creaminess. Store in an airtight container for up to 2 months.
