Description
A quick and healthy frozen snack made with creamy Greek yogurt, blueberries, and a hint of citrus.
Ingredients
- 1 1/2 cups plain Greek yogurt
- 3/4 cup blueberries, fresh or frozen
- 1 tbsp honey or maple syrup
- 1 tsp honey (optional)
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp chia seeds
Instructions
- In a mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract. Stir until smooth and well combined.
- Gently fold in the blueberries and chia seeds, taking care not to crush the berries.
- Spoon the mixture into silicone molds or an ice cube tray, filling each cavity about three-quarters full.
- Place the molds flat in the freezer for about 2 hours, or until firm to the touch.
- Once frozen solid, pop the yogurt bites out of the molds and transfer them to an airtight container.
- Store in the freezer and take out a few bites whenever desired.
Notes
Use full-fat Greek yogurt for creaminess. Store in an airtight container for up to 2 months.
