Bold Flavor-Packed Coleslaw


Description

A vibrant mix of fresh vegetables and a creamy dressing, this coleslaw is perfect for summer barbecues and family gatherings.


Ingredients

  • 1 small head of green cabbage, finely shredded
  • 2 large carrots, grated
  • 1 red bell pepper, diced
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: chopped onions or jalapeños for heat


Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrots, and diced red bell pepper.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and sugar until smooth.
  3. Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
  4. Season with salt and pepper to taste.
  5. If desired, fold in some chopped onions or jalapeños for extra flavor.
  6. Refrigerate for at least 30 minutes before serving.

Notes

For a lighter version, substitute Greek yogurt for half of the mayonnaise. This coleslaw pairs well with barbecued meats or can be served in wraps.
