Ingredients
- 1 small head of green cabbage, finely shredded
- 2 large carrots, grated
- 1 red bell pepper, diced
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- Salt and pepper to taste
- Optional: chopped onions or jalapeños for heat
Instructions
- In a large bowl, combine the shredded cabbage, grated carrots, and diced red bell pepper.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and sugar until smooth.
- Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
- Season with salt and pepper to taste.
- If desired, fold in some chopped onions or jalapeños for extra flavor.
- Refrigerate for at least 30 minutes before serving.
Notes
For a lighter version, substitute Greek yogurt for half of the mayonnaise. This coleslaw pairs well with barbecued meats or can be served in wraps.
