Description

Delicious and versatile rolled tortillas filled with savory ingredients, perfect for a quick breakfast or special brunch.


Ingredients

  • 7-ounce box of fully cooked sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper, to taste
  • 1 ½ cups of your favorite shredded cheese
  • 10 white corn tortillas (or 6-inch flour tortillas)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet over medium-high heat, add the sausage links and cook until heated through. Transfer to a plate, leaving drippings in the skillet.
  3. Crack the eggs into a bowl, add a splash of water or milk, and whisk. Pour into the skillet, season with salt and pepper, and scramble until cooked.
  4. Warm the tortillas in a hot, dry skillet until pliable.
  5. Distribute the scrambled eggs among the tortillas, add cheese and a sausage link, then roll tightly and place seam side down on a baking sheet.
  6. Lightly spray with cooking spray and bake for 10-15 minutes until golden brown and crispy. Serve warm with salsa.
