Ingredients
- 7-ounce box of fully cooked sausage links
- 5 large eggs
- Salt and freshly ground black pepper, to taste
- 1 ½ cups of your favorite shredded cheese
- 10 white corn tortillas (or 6-inch flour tortillas)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet over medium-high heat, add the sausage links and cook until heated through. Transfer to a plate, leaving drippings in the skillet.
- Crack the eggs into a bowl, add a splash of water or milk, and whisk. Pour into the skillet, season with salt and pepper, and scramble until cooked.
- Warm the tortillas in a hot, dry skillet until pliable.
- Distribute the scrambled eggs among the tortillas, add cheese and a sausage link, then roll tightly and place seam side down on a baking sheet.
- Lightly spray with cooking spray and bake for 10-15 minutes until golden brown and crispy. Serve warm with salsa.
