Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a medium saucepan, melt the peanut butter and unsalted butter over low heat, stirring until smooth.
- Remove from heat and stir in the vanilla extract and powdered sugar. Mix until well combined.
- Press the mixture evenly into the bottom of a greased 9×9 inch baking dish.
- In another saucepan, melt the semi-sweet chocolate chips with the vegetable oil over low heat, stirring until smooth.
- Pour the chocolate mixture over the peanut butter layer in the baking dish, spreading it evenly.
- Refrigerate for at least 2 hours or until firm.
- Cut into squares and serve your delicious buckeye fudge!
Notes
You can substitute creamy peanut butter for crunchy peanut butter for added texture or use dairy-free chocolate chips for a vegan version.
