Description

A delightful blend of spicy, cheesy goodness rolled into golden tortillas, perfect for snacks, parties, or an easy weeknight dinner.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small tortillas
  • Oil for frying
  • Blue cheese or ranch dressing for dipping


Instructions

  1. In a mixing bowl, combine the shredded chicken with the buffalo sauce and cheese. Mix until well incorporated.
  2. Take a tortilla and scoop a portion of the chicken mixture onto it. Roll it up tightly, ensuring the filling stays inside.
  3. Heat oil in a skillet over medium heat, ensuring there’s enough to cover the bottom for frying.
  4. Carefully place the rolled taquitos in the pan and fry until they turn golden brown and crispy on all sides.
  5. Once they’re nice and crisp, remove them from the oil and let them drain on paper towels.
  6. Serve hot, with a side of blue cheese or ranch dressing for dipping.

Notes

For an extra kick, mix in diced jalapeños or shredded carrots into the chicken mixture. These can also be baked at 400°F (200°C) for 15-20 minutes until crispy.
