Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat. Brown the chicken breasts on both sides, then remove and set aside.
  2. Sauté onion, garlic, bell pepper, and celery in the same pot until tender.
  3. Pour in chicken broth and diced tomatoes, bringing to a boil.
  4. Stir in Cajun seasoning, salt, and pepper, return chicken to the pot, and let simmer for 15-20 minutes.
  5. Remove the chicken, shred it, and return the meat to the pot. Stir in heavy cream and heat through.
  6. Serve hot, garnished with chopped green onions.

Notes

For dairy-free options, substitute heavy cream with coconut milk. Use homemade chicken broth for richer flavor.
