Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Brown the chicken breasts on both sides, then remove and set aside.
- Sauté onion, garlic, bell pepper, and celery in the same pot until tender.
- Pour in chicken broth and diced tomatoes, bringing to a boil.
- Stir in Cajun seasoning, salt, and pepper, return chicken to the pot, and let simmer for 15-20 minutes.
- Remove the chicken, shred it, and return the meat to the pot. Stir in heavy cream and heat through.
- Serve hot, garnished with chopped green onions.
