Description
A warming and creamy Cajun white chicken chili that’s quick to make and packed with flavor.
Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 4 cups chicken broth
- 1 can (4 oz) diced green chilies
- 2 tsp Cajun seasoning
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh cilantro for garnish
- Sour cream and cheese for topping (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 5 minutes.
- Add minced garlic and cook for another minute, stirring frequently.
- Stir in andouille sausage, cooking until browned and fragrant, about 5-7 minutes.
- Add shredded chicken, white beans, chicken broth, diced green chilies, Cajun seasoning, cumin, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat to a simmer. Let simmer for about 20 minutes.
- Add peeled shrimp, cooking until pink and fully cooked through, about 5 minutes.
- Serve hot, garnished with fresh cilantro and topped with sour cream and cheese if desired.
Notes
For thicker chili, mash some beans. Adjust Cajun seasoning to taste.
