Description

A warming and creamy Cajun white chicken chili that’s quick to make and packed with flavor.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 2 tsp Cajun seasoning
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh cilantro for garnish
  • Sour cream and cheese for topping (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 5 minutes.
  2. Add minced garlic and cook for another minute, stirring frequently.
  3. Stir in andouille sausage, cooking until browned and fragrant, about 5-7 minutes.
  4. Add shredded chicken, white beans, chicken broth, diced green chilies, Cajun seasoning, cumin, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat to a simmer. Let simmer for about 20 minutes.
  6. Add peeled shrimp, cooking until pink and fully cooked through, about 5 minutes.
  7. Serve hot, garnished with fresh cilantro and topped with sour cream and cheese if desired.

Notes

For thicker chili, mash some beans. Adjust Cajun seasoning to taste.
