Description

A delightful combination of ground beef, tender potatoes, and ooey-gooey cheese, this casserole is the ultimate comfort food for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced thinly
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • Olive oil (for cooking)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and ground beef, cooking until the beef is browned. Drain the excess fat.
  3. In a mixing bowl, combine the cream of mushroom soup and milk, stirring until smooth and creamy.
  4. In a greased casserole dish, layer half of the sliced potatoes. Spread the ground beef mixture over the potatoes and pour half of the soup mixture on top.
  5. Repeat the layers with the remaining potatoes, ground beef, and soup mixture.
  6. Generously sprinkle shredded cheese on top.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  9. Serve warm and enjoy your hearty meal!

Notes

Feel free to substitute ground beef with ground turkey or chicken for a lighter option or use dairy-free cheese for a plant-based version.
