Description

A comforting one-dish meal featuring seasoned ground beef, rice, and melted cheddar cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is softened, 6–8 minutes. Drain excess fat.
  3. Stir the uncooked rice into the skillet with the beef. Pour in the beef broth and the can of cream of mushroom soup. Add salt, black pepper, and paprika. Stir until combined. Bring the mixture to a gentle boil, then reduce heat and simmer for about 5 minutes.
  4. Transfer the mixture into the prepared baking dish and spread it evenly. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  5. Remove the foil, sprinkle the shredded cheddar cheese over the top, and return the casserole to the oven. Bake uncovered for an additional 10–15 minutes, until the cheese is melted and bubbly and the rice is tender.
  6. Garnish with chopped parsley before serving.

Notes

For fluffy texture, use long-grain rice. Can substitute with reduced-sodium broth and adjust salt to taste.
