Description
A quick and hearty one-pot dish combining the flavors of tacos into a delicious rice skillet.
Ingredients
- 1 pound lean ground beef
- 1 can beans (black or pinto)
- 1 cup corn (frozen or canned)
- 2 cups ready rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, cilantro
Instructions
- In a large skillet, cook the ground beef over medium heat until it’s browned. Drain any excess fat.
- Stir in the taco seasoning, beans, corn, and ready rice. Mix well and cook for about 5 minutes.
- Reduce heat to low and sprinkle shredded cheese on top. Cover and let sit until cheese is melted.
- Season with salt and pepper to taste and serve with optional toppings.
Notes
Consider adding jalapeños for extra spice or using turkey for a leaner option.
