Description

A quick and hearty one-pot dish combining the flavors of tacos into a delicious rice skillet.


Ingredients

  • 1 pound lean ground beef
  • 1 can beans (black or pinto)
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, cilantro


Instructions

  1. In a large skillet, cook the ground beef over medium heat until it’s browned. Drain any excess fat.
  2. Stir in the taco seasoning, beans, corn, and ready rice. Mix well and cook for about 5 minutes.
  3. Reduce heat to low and sprinkle shredded cheese on top. Cover and let sit until cheese is melted.
  4. Season with salt and pepper to taste and serve with optional toppings.

Notes

Consider adding jalapeños for extra spice or using turkey for a leaner option.
