Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time; stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture for a soft dough.
  5. Fold in the dried cranberries, orange zest, and nuts if using.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 10-12 minutes, or until the edges turn golden brown while the centers remain chewy.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For perfectly chewy cookies, don’t overbake! Use room temperature butter for best results.
