Ingredients
- 1 cup cooked chicken, shredded
- 1 cup mushrooms, sliced
- 1 cup fresh spinach, chopped
- 1 tablespoon olive oil
- 1 cup milk
- 1 cup all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cheese (e.g., mozzarella or Swiss), shredded
Instructions
- In a skillet, heat the olive oil over medium heat. Sauté the mushrooms until they become soft, then introduce the chopped spinach until it wilts. Stir in the shredded chicken, season with salt and pepper, and set aside.
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth.
- Heat a non-stick skillet over medium heat. Pour in a small amount of the crêpe batter, swirling to coat the bottom evenly. Cook for about 1-2 minutes per side until lightly browned.
- Remove the crêpe and fill it with the chicken, mushroom, and spinach mixture. Top with shredded cheese.
- Roll up the crêpe and place it in a baking dish. Repeat with the remaining batter and filling.
- Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until heated through and cheese is melted. Serve warm.
