Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Fresh herbs (like rosemary or thyme)
  • Vegetables (such as potatoes, carrots, or green beans)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by patting it dry and drizzling it with olive oil.
  3. Season the chicken generously with salt, pepper, garlic powder, onion powder, and paprika.
  4. Place fresh herbs inside the cavity of the chicken for an aromatic touch.
  5. Arrange the chopped vegetables around the chicken in a roasting pan.
  6. Roast the chicken in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Once done, remove the chicken from the oven and let it rest for 10 minutes before carving.

Letting the chicken sit at room temperature for about 30 minutes before cooking can ensure even cooking. Basting the chicken halfway through roasting can achieve a golden-brown color.
