Ingredients

Instructions
- In a bowl, combine olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper. Add the chicken, ensuring it’s well coated, and let it marinate for at least 30 minutes (or up to overnight for intensified flavors).
- Preheat your oven to 400°F (200°C).
- While the chicken is marinating, chop your vegetables into bite-sized pieces.
- In a skillet over medium heat, add a splash of olive oil and sauté the vegetables until they’re vibrant and tender, about 5-7 minutes.
- Once the chicken has marinated, transfer it to a baking dish and surround it with the sautéed vegetables.
- Bake for 25-30 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove from the oven, garnish with fresh herbs, and serve hot.
Notes
For an impressive presentation, plate the chicken and nestle the sautéed vegetables around it. Add a slice of lemon on the side and drizzle some extra virgin olive oil over everything.
