Description

Ingredients

  • 4 eggs
  • 1 can chickpeas, drained and rinsed
  • Sun-dried tomatoes, to taste
  • Olive oil
  • Salt and pepper, to taste


Instructions

  1. Heat a drizzle of olive oil in a non-stick skillet over medium heat.
  2. Toss in the chickpeas and sun-dried tomatoes, sautéing them for a few minutes until they’re heated through and fragrant.
  3. Create small wells in the chickpeas and crack an egg into each well.
  4. Cover the skillet, allowing it to cook until the eggs are set to your liking.
  5. Sprinkle with salt and pepper before serving.

Notes

Plate with fresh herbs or feta cheese for added flavor. Pairs beautifully with crusty bread or a green salad.
