Ingredients
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
- ½ cup unsalted butter (softened)
- ½ cup brown sugar
- 1 tbsp ground cinnamon
- 24 oz cream cheese (softened)
- 1 cup sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 1 cup sour cream
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- 4 oz cream cheese (softened)
- ¼ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1-2 tbsp milk (optional, to thin if needed)
Instructions
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter until crumbly. Press into the bottom of a greased springform pan. Bake for 10 minutes at 325°F (163°C) until set.
- Make the Cinnamon Roll Layer: Beat together butter, brown sugar, and cinnamon until smooth. Set aside.
- Prepare the Cheesecake Filling: Blend cream cheese and sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream until combined. Mix in brown sugar and cinnamon.
- Add the Cinnamon Swirl: Pour half of the cheesecake batter into the crust. Dollop with half of the cinnamon roll mixture and swirl gently. Repeat with remaining batter and cinnamon mixture.
- Bake the Cheesecake: Bake for 60-70 minutes until the center is set but slightly jiggly. Turn off the oven and leave cheesecake inside for an additional hour. Cool completely before refrigerating for at least 4 hours.
- Make the Cream Cheese Frosting: Beat together cream cheese, butter, powdered sugar, and vanilla extract. Add milk to achieve desired consistency.
- Serve: Spread frosting over the chilled cheesecake and slice to serve.
Notes
For extra cinnamon flavor, adjust the amount of cinnamon as desired. Using a water bath while baking can help prevent cracking.
