Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (optional, to thin if needed)


Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter until crumbly. Press into the bottom of a greased springform pan. Bake for 10 minutes at 325°F (163°C) until set.
  2. Make the Cinnamon Roll Layer: Beat together butter, brown sugar, and cinnamon until smooth. Set aside.
  3. Prepare the Cheesecake Filling: Blend cream cheese and sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream until combined. Mix in brown sugar and cinnamon.
  4. Add the Cinnamon Swirl: Pour half of the cheesecake batter into the crust. Dollop with half of the cinnamon roll mixture and swirl gently. Repeat with remaining batter and cinnamon mixture.
  5. Bake the Cheesecake: Bake for 60-70 minutes until the center is set but slightly jiggly. Turn off the oven and leave cheesecake inside for an additional hour. Cool completely before refrigerating for at least 4 hours.
  6. Make the Cream Cheese Frosting: Beat together cream cheese, butter, powdered sugar, and vanilla extract. Add milk to achieve desired consistency.
  7. Serve: Spread frosting over the chilled cheesecake and slice to serve.

Notes

For extra cinnamon flavor, adjust the amount of cinnamon as desired. Using a water bath while baking can help prevent cracking.
