Description

Delightful bite-sized cookies that capture the warm essence of cinnamon rolls, perfect for brunch or an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is fluffy.
  4. Beat in the egg and vanilla extract until creamy and smooth.
  5. Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  6. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  7. On a piece of parchment paper, spread half of the dough, sprinkle the cinnamon filling evenly over it, and roll it up tightly into a log.
  8. Slice into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the cookies are golden brown.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
