Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- For the Filling:
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
- In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is fluffy.
- Beat in the egg and vanilla extract until creamy and smooth.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Prepare the filling by combining brown sugar and cinnamon in a small bowl.
- On a piece of parchment paper, spread half of the dough, sprinkle the cinnamon filling evenly over it, and roll it up tightly into a log.
- Slice into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the cookies are golden brown.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
