Description

Delightful coffee rolls bursting with rich coffee flavor, perfect for breakfast or any occasion.


Ingredients

  • ¼ cup all-purpose flour
  • ¾ cup water
  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (room temperature)
  • 2/3 cup dark brown sugar (or light brown sugar)
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons instant coffee granules
  • 2 oz cream cheese (softened)
  • 4 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules


Instructions

  1. In a small saucepan, whisk together the water and ¼ cup of all-purpose flour. Cook over medium heat, whisking constantly for about 4-5 minutes until the mixture is a paste-like slurry. Transfer to a bowl and set aside to cool.
  2. In a stand mixer bowl, combine the remaining 3 ½ cups flour, sugar, yeast, and salt. Stir until evenly mixed.
  3. Slightly warm the milk and dissolve the instant coffee into it. Add this mixture to the dry ingredients along with the egg, vanilla extract, and tangzhong.
  4. Using the dough hook, knead on low speed for 2 minutes until the dough starts to come together.
  5. Gradually add the 4 tablespoons of softened butter one tablespoon at a time, allowing each piece to incorporate before adding the next.
  6. Knead for another 8-10 minutes until the dough is smooth and elastic, adding flour or milk as needed.
  7. Form the dough into a ball and place it seam side down in a buttered bowl. Cover with plastic wrap and let rise until doubled, about 45-60 minutes.
  8. Meanwhile, prepare the filling by mixing the 5 tablespoons of softened butter, brown sugar, cinnamon, and instant coffee until smooth.
  9. Once the dough has risen, roll it out into a 14×18 rectangle. Spread the coffee cinnamon filling all over the dough.
  10. Cut the dough into twelve 1 ½-inch strips and roll each strip away from you. Place in a greased baking pan and cover. Let rise until doubled, about 45-60 minutes. Preheat oven to 325°F (163°C).
  11. Bake the rolls for 20-23 minutes until golden brown. Allow to cool on a wire rack.
  12. For the frosting, mix softened cream cheese and butter, then beat in the powdered sugar. Add heavy cream and instant coffee, mixing until smooth.
  13. Spread the frosting generously over the cooled rolls and enjoy!

Notes

For a twist, try using flavored coffee granules or adding chocolate chips to the filling.
