Description

Colcannon is a comforting Irish dish that combines creamy mashed potatoes with tender greens like kale or cabbage, perfect for a warm, hearty meal.


Ingredients

  • 2 cups mashed potatoes
  • 2 cups chopped kale or cabbage
  • 1/2 cup chopped green onions
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of water to a boil. Add chopped kale or cabbage and cook until tender, about 5-7 minutes. Drain and set aside.
  2. In a separate pot, combine mashed potatoes with milk and stir until smooth.
  3. Fold in the cooked greens and chopped green onions. Add the butter and mix until combined.
  4. Season with salt and pepper to taste.
  5. Serve warm, garnished with extra green onions or a drizzle of melted butter if desired.

Notes

Feel free to swap kale for cabbage or use dairy-free milk if needed. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
