Ingredients
- 2 cups mashed potatoes
- 2 cups chopped kale or cabbage
- 1/2 cup chopped green onions
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Add chopped kale or cabbage and cook until tender, about 5-7 minutes. Drain and set aside.
- In a separate pot, combine mashed potatoes with milk and stir until smooth.
- Fold in the cooked greens and chopped green onions. Add the butter and mix until combined.
- Season with salt and pepper to taste.
- Serve warm, garnished with extra green onions or a drizzle of melted butter if desired.
