Description

A comforting soup that combines cheddar cheese, broccoli, and quinoa for a nutritious and flavorful experience.


Ingredients

  • 1 cup quinoa
  • 4 cups vegetable broth
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup milk or cream
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add chopped onion, minced garlic, diced carrots, and celery to the pot, sautéing until softened.
  2. Rinse the quinoa under cold water, then add it to the pot along with the vegetable broth. Bring to a boil.
  3. Reduce the heat and let the soup simmer for about 15 minutes.
  4. Add the broccoli florets and cook for an additional 5 minutes.
  5. Incorporate the shredded cheddar cheese and milk or cream, cooking until the cheese has melted.
  6. Season with salt and pepper to taste, then serve warm.

Notes

For a dairy-free option, substitute with almond milk or nutritional yeast. Leftovers can be stored in the fridge for up to three days.
