Ingredients

  • 1 cup low-fat cottage cheese (2%)
  • 1 cup self-rising flour
  • Everything bagel seasoning (optional, for topping)
  • 1 egg, beaten (for egg wash, optional)
  • Rice flour (for dusting, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Drain cottage cheese using cheesecloth until very dry.
  3. Blend drained cottage cheese until smooth.
  4. In a bowl, gently fold cottage cheese into self-rising flour until combined (do not overmix).
  5. Turn dough onto a lightly floured surface and knead 10 times.
  6. Divide into 8 equal pieces, shape into balls, and poke holes in the center. Stretch to form bagel rings.
  7. Dust fingers with rice flour if needed to avoid sticking.
  8. Place shaped bagels on the prepared baking sheet.
  9. Brush with water or beaten egg for shine and crust.
  10. Bake for 22-25 minutes, rotating tray halfway through, until golden and hollow-sounding when tapped.
  11. Transfer to wire rack and cool for 5 minutes before serving.
