Description

A creamy, protein-packed bread pudding made with cottage cheese, eggs, and wholesome bread for the perfect balance of comfort and nutrition.


Ingredients

  • 2 cups cottage cheese (full-fat recommended)
  • 4 cups day-old bread (sourdough, challah, or whole grain)
  • 3 large eggs
  • 1 1/2 cups milk (dairy or dairy-free)
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 baking dish.
  2. In a blender, combine cottage cheese, eggs, milk, maple syrup (or honey), vanilla, and cinnamon until smooth.Blending cottage cheese mixture for bread pudding
  3. Place the bread cubes in a large bowl and pour the blended mixture over them. Stir to coat evenly and let soak for at least 30 minutes.

Notes
