Soft, healthy, and protein-rich cottage cheese bread that’s perfect for toast, sandwiches, or a simple snack. Made with cottage cheese and simple ingredients for a moist, fluffy result.
Ingredients
- 2 cups cottage cheese
- 3 large eggs
- ½ cup flour (coconut flour for low-carb or all-purpose for traditional)
- 1–2 tbsp honey or maple syrup (optional, for sweet version)
- 1 tsp garlic powder or mixed herbs (optional, for savory version)
- Salt to taste
- Butter or oil for greasing pan
Instructions
- Preheat oven to 350°F (175°C).
- In a food processor or blender, blend cottage cheese and eggs until smooth.
- Add honey or maple syrup for sweet version, or garlic powder/herbs for savory version.
- Stir in flour until fully combined.
- Grease an 8×4-inch loaf pan or line with parchment paper.
- Pour batter into pan and smooth the top.
- Bake for 45–55 minutes or until a toothpick inserted comes out clean.
- Let cool completely in the pan before slicing.
Notes
You can also bake this as flatbread on a sheet or in muffin tins for smaller portions. Rotate the pan halfway through baking for even browning.
