Ingredients
- 6 large eggs
- 1 cup cottage cheese
- ½ cup milk
- 1 cup spinach (chopped)
- ½ cup mushrooms (sliced)
- ½ cup bell peppers (chopped)
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk eggs, cottage cheese, and milk.
- Stir in spinach, mushrooms, peppers, salt, and pepper.
- Pour into greased baking dish.
- Bake for 35–40 minutes until golden and set.
- Slice and serve warm.
Notes
For a keto-friendly option, add sausage and extra cheese. For vegetarian, skip the meat and add more veggies.
