Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 1 cup spinach (chopped)
  • ½ cup mushrooms (sliced)
  • ½ cup bell peppers (chopped)
  • ½ tsp salt
  • ¼ tsp black pepper


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk eggs, cottage cheese, and milk.
  3. Stir in spinach, mushrooms, peppers, salt, and pepper.
  4. Pour into greased baking dish.
  5. Bake for 35–40 minutes until golden and set.
