Rich, fudgy, and secretly healthy cottage cheese brownies packed with protein but full of chocolatey decadence.
Ingredients
- 1 cup full-fat cottage cheese
- 2 large eggs
- 1/2 cup maple syrup or coconut sugar
- 1/2 cup unsweetened cocoa powder
- 1/3 cup almond flour
- 1/2 cup chocolate chips
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
Preheat oven to 350°F (175°C) and line a square baking pan with parchment paper.
In a high-speed blender or food processor, blend cottage cheese, eggs, maple syrup, and vanilla until completely smooth.
In a mixing bowl, whisk together cocoa powder, almond flour, and salt.
Pour the blended wet mixture into the dry ingredients and stir until just combined.
Fold in chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with fudgy crumbs.
Cool completely in the pan before slicing into squares.
Notes
For extra richness, use dark chocolate chips. Store in an airtight container in the refrigerator for up to 5 days for best texture.
