Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup cottage cheese (low-fat or full-fat)
- 1 cup marinara sauce
- 1 tablespoon Italian seasoning
- 1 cup bread crumbs
- 2 tablespoons olive oil
- Grains or veggies (e.g., quinoa, brown rice, or steamed vegetables)
Instructions
- Preheat your oven to 400°F (200°C). Season the chicken breasts with Italian seasoning, salt, and pepper.
- Dip each chicken breast into olive oil, then coat them with bread crumbs.
- Place the chicken on a baking sheet and bake for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the oven and spread marinara sauce over each breast. Top generously with cottage cheese.
- Return to the oven for an additional 10-15 minutes until the cheese is bubbly and golden.
- Spoon your choice of grains or veggies into a bowl, place the chicken on top, and enjoy!
Notes
For an extra cheesy touch, add grated Parmesan before the final bake. You can also double-dip the chicken for a crunchier crust.
