Description

A lighter, protein-packed take on the classic Chicken Parmesan, this bowl combines crispy chicken, creamy cottage cheese, and flavorful marinara, perfect for busy nights or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 cup marinara sauce
  • 1 tablespoon Italian seasoning
  • 1 cup bread crumbs
  • 2 tablespoons olive oil
  • Grains or veggies (e.g., quinoa, brown rice, or steamed vegetables)


Instructions

  1. Preheat your oven to 400°F (200°C). Season the chicken breasts with Italian seasoning, salt, and pepper.
  2. Dip each chicken breast into olive oil, then coat them with bread crumbs.
  3. Place the chicken on a baking sheet and bake for about 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the oven and spread marinara sauce over each breast. Top generously with cottage cheese.
  5. Return to the oven for an additional 10-15 minutes until the cheese is bubbly and golden.

Notes
