Cottage Cheese Chicken Parmesan Bowl

A delightful twist on the classic Italian dish, combining rich flavors of chicken and marinara with the creaminess of cottage cheese. Perfect for busy weeknights!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Italian seasoning (optional)
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning if using.
  3. Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until fully cooked and juices run clear.
  4. Remove the chicken and slice it into bite-sized pieces.
  5. In a mixing bowl, combine the cooked chicken pieces with marinara sauce and half of the cottage cheese.
  6. In individual bowls or a large baking dish, layer the chicken mixture. Top with the remaining cottage cheese and sprinkle with shredded mozzarella and Parmesan cheese.
  7. Bake for about 20-25 minutes, or until the cheese is melted and bubbling.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a microwave or oven until heated through.
