Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup marinara sauce (store-bought or homemade)
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Italian seasoning (optional)
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning if using.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until fully cooked and juices run clear.
- Remove the chicken and slice it into bite-sized pieces.
- In a mixing bowl, combine the cooked chicken pieces with marinara sauce and half of the cottage cheese.
- In individual bowls or a large baking dish, layer the chicken mixture. Top with the remaining cottage cheese and sprinkle with shredded mozzarella and Parmesan cheese.
- Bake for about 20-25 minutes, or until the cheese is melted and bubbling.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a microwave or oven until heated through.
