Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup full-fat small-curd cottage cheese, blended smooth
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1 cup chocolate chips, nuts, or dried fruit
Instructions
1-Cream together butter, brown sugar, and granulated sugar until light and fluffy.
2-Add blended cottage cheese, egg, and vanilla extract. Mix until smooth.
3-In a separate bowl, whisk flour, baking soda, and salt.
4-Gradually mix dry ingredients into wet ingredients until just combined. Do not overmix.
5-Cover and chill dough in the refrigerator for at least 30 minutes.
6-Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
7-Scoop rounded tablespoons of dough onto baking sheet, leaving 2 inches apart.
8-Bake for 10–12 minutes, until edges are golden and centers are slightly soft.
9-Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use full-fat, small-curd cottage cheese for the best texture. Chill dough to prevent excess spreading and achieve a chewy, bakery-style result.
