Description

This classic cottage cheese fruit salad is creamy, vibrant, and packed with protein. Perfect for a speedy breakfast, light lunch, or a healthy dessert.


Ingredients

2 cups full-fat cottage cheese

1 cup fresh strawberries, sliced

1 cup blueberries

1 cup chopped melon or pineapple

1 cup mandarin oranges (canned, well drained)

1 kiwi, chopped

12 tablespoons honey or maple syrup (optional)

1 teaspoon vanilla extract (optional)

Toasted nuts or granola for garnish (optional)

Instructions

If desired, blend the cottage cheese in a food processor for 30–60 seconds until smooth and creamy.

Transfer the cottage cheese to a large mixing bowl.

Gently fold in the fresh and/or canned fruit using a spatula, being careful not to crush delicate fruits.
