Ingredients

  • 1 cup cottage cheese (small curd, low-fat recommended)
  • 1 cup frozen strawberries (or any frozen fruit)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)


Instructions

  1. Add cottage cheese, honey, and vanilla (if using) to high-powered blender.
  2. Top with frozen strawberries.
  3. Blend on high speed for 45-60 seconds, stopping once to scrape sides.
  4. Blend until completely smooth with no visible curds.
  5. Check thickness—should be like soft-serve ice cream.
  6. Serve immediately with your favorite toppings.

Notes

Fruit must be completely frozen (4+ hours minimum). Small curd cottage cheese blends smoothest. Add 1-2 tablespoons milk if too thick to blend. For firmer texture, freeze for 30 minutes after blending.
