Description

A silky, protein-packed mousse made from cottage cheese that transforms this humble ingredient into a decadent and healthy dessert.


Ingredients

  • 2 cups cottage cheese (small-curd preferred)
  • 23 tbsp unsweetened cocoa powder (for chocolate version)
  • 23 tbsp honey, maple syrup, or sweetener of choice
  • 1 tsp vanilla extract
  • Optional: fresh berries, instant coffee, cinnamon, or other flavorings

Instructions

  1. Bring the cottage cheese to room temperature for best blending results.
  2. Add cottage cheese to a food processor or high-speed blender.

  3. Blend for 30–45 seconds until completely smooth.
  4. Add sweetener, cocoa powder (if using), vanilla extract, and any flavor additions.

  6. Chill in the refrigerator for 1 hour before serving.

Notes

For the smoothest texture, use small-curd cottage cheese. Full-fat gives the richest flavor, but low-fat also works well.
