Description

A comforting blend of earthy mushrooms and creamy cottage cheese, perfect for a quick weeknight dinner.


Ingredients

  • 1 cup cottage cheese
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onions and minced garlic, sautéing until they are soft and fragrant.
  3. Incorporate the sliced mushrooms into the pot and cook until tender.
  4. Pour in the vegetable broth and bring it to a boil.
  5. Once boiling, reduce heat and stir in the cottage cheese. Let it simmer for 10 minutes.
  6. Season with salt and pepper to taste.
  7. Blend the soup with an immersion blender for a smooth texture or leave it chunky if preferred.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

Cool leftovers and store in the refrigerator for up to 4 days. May freeze for up to 2 months.
