Ingredients
- 1 cup cottage cheese
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions and minced garlic, sautéing until they are soft and fragrant.
- Incorporate the sliced mushrooms into the pot and cook until tender.
- Pour in the vegetable broth and bring it to a boil.
- Once boiling, reduce heat and stir in the cottage cheese. Let it simmer for 10 minutes.
- Season with salt and pepper to taste.
- Blend the soup with an immersion blender for a smooth texture or leave it chunky if preferred.
- Serve hot, garnished with fresh herbs if desired.
