  • 1 lb boneless, skinless chicken breasts
  • 1 cup rice (white or brown)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 packet ranch seasoning mix
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, bacon


Instructions

  1. In a large pot, add the chicken, onion, carrots, and celery. Pour in the chicken broth and bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, allowing the chicken to cook through.
  3. Carefully remove the chicken from the pot, shred it with two forks, and return to the pot.
  4. Sprinkle in the rice and ranch seasoning mix, stirring to combine.
  5. Pour in the heavy cream and let the soup simmer for another 20 minutes, or until the rice is tender.
  6. Season with salt and pepper to taste.
