Description

These delightful bars combine tart cranberries and sweet white chocolate, topped with creamy frosting, perfect for the holiday season.


Ingredients

  • 1 cup of dried cranberries
  • 1 cup of white chocolate chips
  • 1/2 cup of packed brown sugar
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of ground ginger
  • Cream cheese frosting for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by lining it with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next, followed by the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and ground ginger. Gradually blend the dry ingredients into the wet mixture, stirring just until combined.
  5. Gently fold in the dried cranberries and white chocolate chips, ensuring they’re evenly distributed throughout the batter.
  6. Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, allow the bars to cool completely in the pan before frosting.
  9. Once cooled, generously frost with cream cheese frosting, slice into bars, and serve.

Notes

Store in an airtight container at room temperature for up to three days, or in the refrigerator for a week. For longer storage, freeze for up to three months.
