Description

A comforting, creamy butter bean soup that warms you up on chilly days, packed with protein and fiber.


Ingredients

  • 2 cups butter beans, cooked (or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Toss in the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables soften.
  3. Add the cooked butter beans, vegetable broth, diced tomatoes, thyme, smoked paprika, salt, and pepper to the pot. Bring the mixture to a gentle boil.
  4. Reduce the heat and let it simmer for about 15-20 minutes.
  5. For a creamier consistency, blend part of the soup with an immersion blender according to your texture preference.
  6. Serve the soup hot, garnished with fresh herbs if desired.

Notes

This soup pairs well with crusty bread or a fresh side salad. Add sour cream or cheese for extra richness.
