Ingredients
- 4 boneless, skinless chicken breasts
- 2 large onions, sliced
- 2 tablespoons butter
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced onions and sauté until caramelized, about 10-15 minutes.
- Season the chicken breasts with salt and pepper. Once the onions are caramelized, remove them from the skillet.
- Add butter to the same skillet and melt. Cook the seasoned chicken breasts for about 6-7 minutes on each side until cooked through and golden brown.
- Return the caramelized onions to the skillet and pour in the heavy cream. Stir well to combine.
- Let the mixture simmer for a few minutes until the sauce thickens slightly.
- Serve warm, garnished with fresh thyme or parsley.
Notes
For a lighter option, substitute chicken breasts with thighs or use vegetable cream. Add mushrooms for an earthy flavor or a splash of balsamic vinegar for enhanced sweetness.
