Description

A warm and comforting creamy cowboy soup filled with hearty beef, fresh vegetables, and rich flavors, perfect for weeknight dinners.


Ingredients

  • 1 lb Ground Beef (or turkey or meat alternative)
  • 1 large Onion (yellow or white)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes (canned, with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed)
  • 2 medium Potatoes (Yukon Gold or russet, diced small)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese


Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks.
  2. Add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent.
  3. Stir in the diced tomatoes, corn, black beans, potatoes, beef broth, smoked paprika, chili powder, cumin, salt, and pepper. Bring to a gentle boil.
  4. Reduce the heat and let it simmer for about 15-20 minutes until the potatoes are tender.
  5. Lower the heat and stir in the heavy cream (or coconut milk) and cheddar cheese, allowing it to melt and blend into the soup.
  6. Taste and adjust the seasonings if needed, then serve hot.

Notes

For added flavor, consider sautéing bell peppers with the onions. Serve with crusty bread or cornbread for dipping.
