Ingredients
- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes (canned, with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (Yukon Gold or russet, diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks.
- Add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion is translucent.
- Stir in the diced tomatoes, corn, black beans, potatoes, beef broth, smoked paprika, chili powder, cumin, salt, and pepper. Bring to a gentle boil.
- Reduce the heat and let it simmer for about 15-20 minutes until the potatoes are tender.
- Lower the heat and stir in the heavy cream (or coconut milk) and cheddar cheese, allowing it to melt and blend into the soup.
- Taste and adjust the seasonings if needed, then serve hot.
Notes
For added flavor, consider sautéing bell peppers with the onions. Serve with crusty bread or cornbread for dipping.
